| If you can't make it to our restaurant by Moraira, on
the Costa Blanca, here's the recipe Ruth uses for our Special Rondo Salad Caesar dressing: Place in a blender - 15g anchovy fillets,
2 teaspoons capers, 2 teaspoons worcestershire sauce (we use Lea & Perrins), 1/2 teaspoon Dijon
mustard, dash of Tabasco, juice of 1/2 a lemon, 1/2 a crushed garlic clove, 2 tablespoons of
grated parmesan, 2 eggs boiled for 90 seconds only, 100ml olive oil, and ground black pepper.
Blitz until thick and creamy and then slowly add another 100-200ml of olive oil until dressing
is thick, emulsified and coats the back of a spoon.
And of course, we must have...Toasted croutons baked in the oven with a little olive oil until golden brown and then tossed whilst still hot with finely grated parmesan. (for our favourite lunch, Ruth adds strips of chargrilled chicken fillet!) In a large bowl mix torn up romaine lettuce, a handful of croutons and generous amounts of dressing. Serve on a plate topped with fresh parmesan. Gorgeous! |
